#En "Chef de cave"-#

Om du någonsin har poppat en flaska champagne, har du njutit av en dryck som tillverkats med största omsorg.
Det är allt tack vare det hårda arbetet av "chef de cave" – champagneproduktionens “Källarmästare”.
En "chef de cave" är ansvarig för att övervaka varje aspekt av champagneproduktionen från druvor till jäsning och åldring. De är i huvudsak hjärnan i källaren, såväl som vakter för kvalitetskontroll. Det betyder att de ansvarar för att endast perfekt mogna druvor av hög kvalitet skördas på fälten och tas till pressen. De måste också vara väl förtrogna med naturens nycker, eftersom vädret spelar en avgörande roll när druvorna mognar varje år. Sedan, när de noggrant övervakar mustkvaliteten, fattar de beslut om vilka temperaturer och kärl (trä, rostfritt stål eller betong) för primär jäsning.

När de första besluten har fattats och den primära jäsningen är klar är det avgörande jobbet med att styra sammansättningen kockens nästa uppgift. Det här är fasen där de blandar den stilla "vin clair" (reserveviner och aktuella årgångsviner) för att skapa en harmonisk och konsekvent smakprofil för att bäst representera champagnehuset genom sina många cuvéer. Dessa blandningar är flaskor med "liquor de tirage" och lämnas att åldras så länge som de finner lämpligt. Men arbetet slutar inte där. De testar regelbundet de åldrande champagnerna för att avgöra när varje cuvée är redo att desgorgeras. När den tiden kommer är det återigen upp till dem att bestämma sockerdoseringsnivån som ska läggas till varje vin för att skapa balans.

Utöver själva bearbetningen måste de också hålla sig ständigt uppkopplade mot den globala champagnemarknaden för att säkerställa att deras produkt uppfyller alla standarder som krävs av nationella och internationella regler. Och slutligen måste de hänga med i trenderna för att identifiera vad konsumenter letar efter när det gäller smakkombinationer och stilar. När en produktionscykel närmar sig sitt slut, kommer en annan skörd snart att vara på väg, vilket betyder att det inte finns någon vila för deras viktiga roll i champagneproduktionen!

Champagnehusen kommer att använda CloeLock för att avskräcka mot förfalskningar.
Ledande champagneproducenter i Frankrike kommer att lägga till nya  folier till flaskor, så att de kan verifieras och spåras genom hela leveranskedjan.
General Syndicate av Vignerons i Champagne (SGV) har kontraktat Advanced Track & Trace -ATT -att leverera Cloe Lock som presenterar en unik serie koder och hologram och är resultatet av ett treårigt utvecklingssamarbete mellan organisationerna.
En QR-kod anpassad till champagnehuset visuella identitet - som visas på utsidan av folien - erbjuder kunder som skannar den med exklusiv information om flaskan, inklusive en "presentationsvideo, historia av vingården, provsmakning råd etc", säger ATT .
En enkel avrivning ger tillgång till varje flaskas unika information dold på insidan av folien. Den innehåller ett serienummer, signatur, meddelande och illustration av varumärket, liksom förmågan att kontrollera flaskans ursprung.
"Cloe är det första förslutning som kan förmedla information mellan olika aktörer på marknaden", säger ATT.
"Denna certifiering av SGV, vilket motsvarar 99 procent av vinodlarna i champagne och lovar leverera varaktiga förpackningsmetoder för hela Champagne."
Tidigare i år, avslöjade italienska polisen 9.000 flaskor med falska Moët & Chandon flaskor värda uppskattningsvis 350.000 € i Padova. Förfalskningen upptäcktes när polisen hittade en flaska utan serienummer på etiketten.

Investera i kända champagnemärken!?

Under årtionden har lyxchampagne märken som Krug, Salon, PR främst marknadsförts som det överlägsna valet för påkostade fester och PR-jippon, snarare än som en seriös alternativ investering.

Naturligtvis har en mindre andel av vinköpare alltid köpt bubbel med senare försäljning i åtanke, men fenomenet att ha champagne främst som en investerings handelsvara har för de flesta varit främmande.
Men tiderna förändras...
Champagne ses numera som både en högtidlig dryck och ett lukrativ investerings val, tack vare en rad utmärkta årgångar som uppmuntrade handlare och konsumenter att diversifiera sitt intresse bortom röda investeringsvinerna.
Champagne "en primeur"?
Men på senare tid har vissa märken som Dom Perignon, börjat med pre-release kampanjer som bär mer än en doft av att ha Bordeaux "en primeur" kring märket i sikte.
Eller kanske "semi-en primeur" skulle vara en bättre beskrivning, som vid närmare granskning av den nuvarande trenden har stora skillnader från sedan länge etablerade Bordeaux modellen.
Bordeaux-systemet bygger på tanken att köpare kan köpa sitt vin några år före buteljering, till ett fördelaktigt pris. Däremot är märken som Dom Pérignon släppt åtta till nio år efter skörden och först då börja sälja vin till konsumenterna med köpmännens påslag.
Dom Pérignon besitter alla de egenskaper som krävs av en investeringsvin som gör det perfekt för "en primeur "stil försäljning.
Ytterligare bevis för champagnens investerings egenskaperär att den under de senaste ett, fem och tio åren överträffat "Fine Wine 1000" index - det bredaste måttet på marknadens intresse för en dryck.
